FLACStands for Free Lossless Audio Codec. An open source codec that contains no proprietary code and can be used freely by anyone. As the name implies encoded files retain the same quality as the source data

Fair UseWhen used in the context of a discussion about copyright fair use refers to the laws that are in place to protect the consumer from overzealous enforcement of copyright. Jitter CorrectionAlthough a CD spins at a constant speed (and so doesn't jitter around) this refers to correcting imperfections in the data stream coming from the CD.
